Black Bean & Cheese Burrito

Like most college campuses, mine had a Taco Bell across the street that was packed around the clock with little teeny-boppers.  Instead of waiting in a 20 minute line to get a 99 cent fatty burrito, I whipped up my own burrito in less than 20 minutes and it was much healthier than TB’s.  Yo quiero reci-pri.

Nacho ordinary nachos

With the Super Bowl right around the corner, I”m really looking forward to some darn good snack food, nachos being one of them.  Despite the stereotype that they are unhealthy, load them with black beans for a healthy dose of protein.

Enchiladas

The first time my boyfriend took me on a date, he took me to a cute little Mexican restaurant.  The food looked scrumptious but I barely ate anything because I was so in awe of him and everything about him.  Today, I decided to make enchiladas, re-create our first date, and actually eat this time.  🙂
