Nacho ordinary nachos

With the Super Bowl right around the corner, I”m really looking forward to some darn good snack food, nachos being one of them.  Despite the stereotype that they are unhealthy, load them with black beans for a healthy dose of protein.

Q: What do you call cheese that’s not yours?
A: Nacho cheese.

  • about 40 tortilla chips
  • 1 cup salsa
  • jalapeños, to taste
  • 1 can unsalted black beans (buy the ones that have no preservatives)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced red onion
  • 1/2 cup diced tomato
  • 3 tbsp light sour cream
  • 1 tsp. taco seasoning
  • 1 cup shredded lettuce
  1. Preheat oven to 350 degrees.
  2. Strain & rinse the black beans.
  3. Lay out the chips on a baking tray.
  4. In the following order, add the ingredients on the chips: black beans, salsa, onion, tomato and cheese. Use a spoon to spread out the ingredients so that every chip is covered.
  5. Sprinkle 1 tsp. taco seasoning.
  6. Add jalapeños.
  7. Bake for 8 minutes.
  8. Take out, let cool for 2 minutes and add the lettuce and some sour cream.
