The first time my boyfriend took me on a date, he took me to a cute little Mexican restaurant.  The food looked scrumptious but I barely ate anything because I was so in awe of him and everything about him.  Today, I decided to make enchiladas, re-create our first date, and actually eat this time.  🙂

Want to hear my tortilla joke? I must warn you . . . it’s really corny.

Ingredients:  Serves 4.  Includes ingredients for black beans.
  • 4 whole wheat (or corn) tortillas
  • 3 cups shredded cheddar and/or jack cheese
  • 10 oz. red enchilada sauce
  • 1 can black beans
  • 8 oz. salsa
  • 1 cup spinach leaves or frozen spinach
  • 1/2 diced red onion
  • 1 diced tomato
  • 1 tbsp.taco seasoning
  • 1 tbsp. oil
  1. Spray a pan with oil.  Heat each tortilla on it, both sides, for about 2 minutes each.  Keep the tortillas on a separate plate.
  2. Make black beans.
  3. Lightly glaze a glass baking/cooking dish with oil.
  4. Add 1/2 cup enchilada sauce and 1/2 cup salsa to bottom of dish.
  5. Fill each tortilla with beans, tomatoes, spinach and cheese.
  6. Place the tortillas on top of the sauce and salsa in the dish.
  7. Pour remaining enchilada sauce on top of each enchilada. Use a spoon to make sure the sauce covers every part of the tortilla.
  8. Add onions, cheese and cilantro on top of the enchiladas.
  9. Bake at 350 degrees for 8 minutes.  (After the first 5 minutes, take the enchiladas out and lift each enchilada with a spatula.  This will ensure that the enchiladas don’t stick to the bottom of the tray and burn during the balance of cooking time.)
