Black Bean & Cheese Burrito

Like most college campuses, mine had a Taco Bell across the street that was packed around the clock with little teeny-boppers.  Instead of waiting in a 20 minute line to get a 99 cent fatty burrito, I whipped up my own burrito in less than 20 minutes and it was much healthier than TB’s.  Yo quiero reci-pri.

Q: What did the burrito say when the taco took him on a date?
A:  Bean there, done that!

Ingredients:  Serves as many as you desire.  Includes ingredients for black beans.
  • whole wheat tortillas (one per burrito)
  • shredded cheddar cheese
  • oil
  • 1 diced tomato
  • ¼ diced onion
  • 1 tbsp. taco seasoning
  • ½ cup salsa
  • 1 can black beans (makes enough for approximately 4 burritos, depending on how stuffed you like your burrito)
Assembly:
  1. Spray a pan with oil. Heat each tortilla on it on medium heat, both sides, for about 2 minutes each. Keep the tortillas on a separate plate.
  2. Make black beans.
  3. Put the beans in a line in the center of the tortilla.
  4. Add cheese.
  5. Optional: Add fresh onion (fresh uncooked onions are a completely different taste than grilled onions.  I love them but R hates them.)
  6. Wrap as pictured.
