Frozen Lemons and Limes

Lemons are indispensable in the kitchen, but rarely do I ever use a whole lemon at once.  Usually, I use half a lemon for lemonade, a wedge in water or a pinch to lighten a scar.  After that, I put the remaining lemon in my fridge and about a week later, I find a puckered up lemon wedge.  I was happy to discover these ideas to priserve my lemons (and limes).

Coconut Mint Chutney

Mint chutney is the most popular condiment in India.  It is served with almost every Indian dish because it so, so flavorful.  Dolly Auntie taught me to make a twist on the original by adding some fresh grated coconut and yogurt for a creamier version.  It was absolutely DELICIOUS.  Her and Uncle have a huge field of mint in their backyard which made making this recipri extra fun!

Baked Tortilla Chips

I love going to Mexican restaurants that serve freshly made tortilla chips.  They taste soo good when they are warm and perfectly crisp.  The only downside to restaurant chips is that they are usually fried in oil.  To create a healthier version, I baked my chips instead of frying them.

Goat Cheese Quesadilla

Being a vegetarian, I like to experiment with cheese as there are many different types – goat, swiss, cheddar, jack, blue, fontina, asiago – and the list goes on!  One of my favorite types is goat cheese because it is so flavorful.  Also, compared to cow’s milk products, goat cheese is lower in fat, calories, and cholesterol.  Nonetheless, it still has a rich and creamy flavor, which means it tastes good on just about anything!
