Goat Cheese Quesadilla

Being a vegetarian, I like to experiment with cheese as there are many different types – goat, swiss, cheddar, jack, blue, fontina, asiago – and the list goes on!  One of my favorite types is goat cheese because it is so flavorful.  Also, compared to cow’s milk products, goat cheese is lower in fat, calories, and cholesterol.  Nonetheless, it still has a rich and creamy flavor, which means it tastes good on just about anything!

Q:  What do you call a goat with a beard?
A:  A goatee.

  1. Spread goat cheese on 1 tortilla.
  2. Spread mashed black beans on another tortilla.
  3. Spray pan with olive oil and heat on medium.
  4. Lay down goat cheese tortilla on pan.
  5. Lay mashed black bean tortilla on top.
  6. Cook for about 3-5 minutes, flipping over to ensure both sides are thoroughly cooked.
