Mozzarella Cheese Sticks

Everyone knows how much I love mozzarella sticks.  It’s one of the few 100% vegetarian appetizers that is on the menu at sports bars.  Thank you to Gina from Skinnytaste for a great healthy alternative to fried mozzarella sticks.

A:  Leave her alone, cheese mine.

Ingredients:  Serves 4 (4 pieces per person).
  • 8 sticks mozzarella string cheese
  • 1 egg
  • 1 tbsp. whole wheat flour
  • 3 tbsp. Italian seasoned breadcrumbs
  • 3 tbsp. panko bread crumbs
  • 1 tsp. parmesan cheese
  • ½ tbsp. dried parsley
  • olive oil cooking spray
Assembly:  This recipe requires overnight preparation.
  1. Cut mozzarella sticks in half to give you 16 pieces.  Place cheese in freezer until frozen (this is the overnight preparation part).
  2. Preheat over to 400 degrees.
  3. In a bowl, whisk the egg.
  4. In another bowl, mix Italian seasoned bread crumbs, panko bread crumbs, parmesan cheese, and dried parsley.
  5. Line baking tray with foil and spray with oil.
  6. Create an assembly line with the following items in the following order: cheese sticks, whole wheat flour, egg, bread crumb mixture.
  7. Dip each cheese stick in flour, then dip in egg, then coat with bread crumbs.
  8. Place on tray.
  9. Spray cheese sticks with a little more oil.
  10. Bake in the oven, on bottom rack, for about 5 minutes or until the bottom is brown and crisp.
  11. Turn cheese sticks over and bake an additional 5 minutes (watch closely to ensure they don’t melt).
Serving suggestions:
  • Serve with warm marinara sauce and/or cold ranch dressing.
PRISERVE: 
  • Don’t throw away the egg shells!  Did you know that egg shells are good for your garden?  Crush the shells and add them to your soil to provide calcium to your plants.
  • Don’t throw away the egg carton!  Egg cartons are meant to store fragile things like eggs (duh!).  So save your egg carton and use it to store holiday ornaments or other fragile items.  They are also great to sort and store pocket change, nuts and bolts for your tool area, buttons or any other tiny item.  Finally, if you go to the farmer’s market, bring your empty egg carton with you to transport the new eggs you purchase – the local farmers will surely thank you for sparing them the cost of packaging material.
