Parsley Dip

I first had parsley dip at Pasta Pomodoro.  It was a great twist on the traditional olive oil & vinegar dip.  Given the health benefits of parsley,  I love serving this appetizer when I make Italian food.

Q: What did the parsley say to the bread?
A: When I dip, you dip, we dip.

Ingredients: 
  • 1 tbsp. chopped garlic
  • 2 tbsp. chopped parsley
  • 15 tbsp. olive oil
  • 3 tbsp. balsamic vinegar
  • a pinch of black pepper
  • a pinch of salt
Assembly:
  1. Add olive oil to a shallow bowl or small plate.
  2. Chop garlic and parsley and add to the bowl. I use a Cusinart chopper/grinder but you can also do this by hand.
  3. Add vinegar.
  4. Sprinkle a hint of black pepper and salt and mix.
Serving suggestions
  • Serve with lightly toasted sourdough bread.
